Sesame Crackers

James and I had some friends over for dinner the other day, and is there ever a better excuse to make your own crackers? These are perfect for cheese and dips, as they are only very lightly salted. I also like rolling them out in big pieces—saved a lot of time, and I think it's a neat look. This recipe is exceptionally easy, the crackers taste great, and they look lovely; I already have a second batch of dough in the fridge, waiting to be rolled.

Sesame Seed Crackers
(Adapted from Whole Living; makes 6 large crackers)

Ingredients:
  • 163 grams whole wheat flour (I used a mix of whole wheat bread flour and spelt flour)
  • 54 grams sesame seeds
  • 3 grams fine salt (I'd add a few grams more if you plan to eat them plain)
  • 48 grams olive oil
  • 90 grams water
  • honey/water wash
    • 5 grams honey
    • 15 grams water
Instructions:

1. Mix dry ingredients. Add oil and water, and mix until combined.
2. Divide dough into 6 pieces—about 60 grams each.
3. On a floured surface, roll each piece to 1/8" thick. Transfer to baking tray and brush with honey/water wash—sprinkle with seeds.
4. Prick each cracker several times with a fork, then bake at 350 for 20 minutes, or until golden brown.
